Classic Spaghetti Carbonara:

A timeless Italian favorite, Classic Spaghetti Carbonara combines al dente spaghetti with crispy pancetta, creamy egg sauce, and a blend of Pecorino Romano and Parmesan cheese.   • 200g spaghetti
  • 100g pancetta or bacon, diced
  • 2 large eggs
  • 50g Pecorino Romano cheese, grated
  • 50g Parmesan cheese, grated
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (optional)


  1. Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  2. In a large skillet, cook the pancetta over medium heat until crispy, about 5-7 minutes. Add the minced garlic and cook for another minute.
  3. In a bowl, whisk together the eggs, Pecorino Romano, and Parmesan cheese.
  4. Add the cooked spaghetti to the skillet with the pancetta and garlic, tossing to coat. Remove the skillet from the heat.
  5. Quickly pour the egg and cheese mixture over the pasta, tossing vigorously to create a creamy sauce. Add reserved pasta water a little at a time if needed to reach desired consistency.
  6. Season with salt and pepper to taste. Serve immediately, garnished with chopped parsley if desired.
